Nate’s Smoked Salmon & Cheddar Duck Egg Omelette Recipe

I had a BBQ yesterday and ate far too much, this has resulted in my still feeling full. So I decided to cook something light (which is also ideal considering how hot it is!). This recipe is super tasty and ideal for a lunch or a light dinner.

What ingredients do I need?

Per omelette:
2 duck eggs
A sprinkling of salt and pepper
2 table spoons of water
1 heaped tea spoon of butter
a few small pieces of smoked salmon
1-2 table spoons of grated cheddar
A sprinkling of ground parsley.

Great i’ve got those ingredients, what do I need to do?

Start by adding the eggs, salt & pepper and water into a mixing bowl and mix well.

 

Then add the butter to a small frying pan and put on a medium heat, wait until it’s fully melted and is covering the pan. Next pour the mixture on top.

 

Keep pushing the edges back to allow the uncooked egg to reach the bottom for an even cook.

Once the top has no visible runny mixture add the salmon, cheese and parsley to one side of the omelette and then flip the other side over it. continue cooking for a couple of minutes and flip it round and do the same.

After then you’re ready to serve and enjoy!
