Nate’s Lemon & Garlic Lamb Pancakes Recipe

It’s Monday tomorrow, so thats certainly a reason to have some comfort food, my lemon & garlic lamb pancakes are healthier than a kebab but feels the comfort food void!

What ingredients do I need?

The following will serve 2:
100g plain flour
2 eggs
300ml milk
400g of diced lamb meat
2 table spoons lemon juice
1/2 table spoon of garlic powder
1/2 table spoon of dried parsley
3 table spoons cooking oil
A sprinking of salt

Great i’ve got those ingredients, what do I need to do?

Firstly put the milk, flour and egg into a mixing bowl and mix well, put 1 table spoon of cooking oil onto a frying pan and put on a medium-high heat. After several minutes pour the mixture into the frying pan, and keep tilting until the mixture overs the whole surface of the pan. Pour more then you normally would for a pancake as we want these to be relatively thicker than normal.

 

Keep cooking until the top layer is looking more solid (when you tilt the pan no liquid runs) and then flip the pancake. Repeat this process for each pancake, and once done plate the pancakes and add more oil and the diced lamb.

 

Once the lamb is largely brown, add the lemon juice, garlic powder, parsley and salt.

  

Keep cooking and stirring on a medium high heat for around 15 minutes and then put on top of the pancakes, and you’re ready to serve!
