Nate’s Prawn and Scallop Pakoras

I do love my Indian cuisine and this is another really good which is easy to make but not the quickest to make. It’s so flavourful you’ll keep coming back for more!

What ingredients do I need?

For the Marinade

½ tea spoon of hot chilli powder
½ tea spoon of salt
1 tea spoon of turmeric powder
1 tea spoon of garam masala
2 tea spoons of lemon juice
15 prawns and scallops assorted

For the Batter
4 table spoons of gram flour (chickpea flour)
½ tea spoon of ground coriander seed
½ tea spoon of cumin seeds
1 tea spoon of garam masala

To Serve
1 cup of rice

 

Great I have those ingredients, what do I need to do?

Before we do anything we need to make our marinade, start by putting all the ingredients marinade ingredients in a bag try and mix up well and then add the prawns and scallops, seal the bag and place in the fridge for at least a couple of hours, i’ve marinaded mine for a day.

Once the prawns and scallops has been marinating for at least 2 hours, put your rice in a saucepan of water on a medium high heat, also put a good amount of oil into a wok or deep pan and place that on a high heat.

Next in a bowl add the gram flour, garam masala, ground coriander and cumin seeds and mix it up well.

    

 

Now that’s done it time to take the prawns and scallops out and place them in the flour one by one until they’re all covered, once they’re all done leave it a couple more minutes to allow the oil to boil.

 

Next up place each into the wok or deep pan, do this slowly and gently as you don’t want to have oil splashing back at you! Leave them to fry for 1 minute before flipping, and then flip again for a minute and then once more for a minute. After that take them out and allow them a cool for a short while. In the mean time start to serve the rice.

 

Now plate the prawns and scallops as well and you’re ready to enjoy!
