Nate’s Jalapeño Spicy Green Rice

I’ve already had a roast this afternoon, which I did not have to cook! #winning. So I was thinking of what I could do for a light lunch, and because I have a rice addiction I automatically thought of rice. I then thought i’ve made orange and red rice but i’ve never seen green rice! I suddenly thought Jalapeño’s are green! (i’m quick aren’t I) and they’ll add a kick to the rice and the rest is history!

This dish would make an amazing side dish or enjoyed as a light lunch like I had, it’s healthy but doesn’t taste healthy and it’s even vegan friendly!

Let me make it what ingredients I you need?
The below will give 4 servings:
1 Jalapeño
1 cup worth of baby spinach  (you could use other subtle tasting greens such as water cress)
8-10 fresh coriander stems with leaves (roughly half a cup full)
1 teaspoon of garlic granules
2 teaspoons of ground ginger
1 table spoon of sea salt
1 table spoon of ground peppercorns
4 table spoons of coconut milk
2 table spoons of water
4 cups of basmati rice

What do I need to do?

Actually not a lot at all! Firstly get your rice and put in a saucepan of water and boil at a medium-high heat.

Next up roughly shop the Jalapeño and place that and all other ingredients into a blender and blend until it’s fully blended (until you can see no lumps)

Once the rice is done, pour the mixture into the saucepan and continue to mix on a low heat, and that’s it you’re ready to serve!
