Nate’s Crispy Hot Wings & Homemade Fries Recipe

Fried chicken, not the healthiest but certainly one of the tastiest – sometimes it’s nice to have a treat. Fried chicken always tastes great, but it tastes even better when you’ve made it yourself! Forget KFC and your local chicken shops and create your treats at home!

What ingredients do I need?
A good about of oil for deep frying the fries and chicken, the amount really depends on the
size of the utensil you intend to try everything in.

For the chicken wings

10 chicken wings
1 table spoon chilli powder
1 table spoon paprika
1 tea spoon of chilli flakes
1 tea spoon of salt
1 tea spoon of pepper
4 heaped table spoons of flour
2 table spoons of bread crumbs

For the fries

2 potatoes
2 table spoons of salt
2 table spoons of pepper
1 table spoon paprika
1/2 table spoon garlic powder
1/2 table spoon chilli powder

1 table spoon sugar

Great i’ve got those ingredients, what do I need to do?

We’re going to start with the fries as we will need to put these in the freezer or a cold fridge for at
least 10 minutes after blanching. Start by squaring off your potatoes by slicing off each corner of the potato, i’m using red potatoes which will create darker brown more rustic fries. Then slice the potato, try to keep each slice the normal fries width, and try and keep each of the fries a similar size so we have even cooking. Then slice each slice into multiple fries, ideally keeping them similar sizes to each other within reason.

Now we’re going to blanch them, what’s does this mean? – We will cook the potatoes in oil but at a medium heat, we don’t’ want to fry them yet we just want them to cook without crisping. We want to cook them in the oil at a medium heat for 6-8 minutes, use a skimmer so you can remove the fries without having lots of oil come with them! After 6-8 minutes place them on kitchen towel and dry them off with another kitchen towel.

 

Next up take all the seasoning ingredients and mix those together and sprinkle over the fries, then plate them and place in a freezer or very cold fridge for 10 minutes, you will likely have to do the fries in batches so repeat this step for each batch.

Next up place your chicken wings into a bowl of salty water, we’ll want this to soak for 10 minutes as well, which is handy. In the meantime we can mix up our coating. Get all the ingredients in a bowl and mix them up.

After 10 minutes we’ll start by frying our chicken as the fries will taste nice fried afterwards, firstly put each chicken into the coating mixture we just made, and rotate each making sure each piece is entirely coated. Place each piece in a bowl for now. Once they are all done place a few pieces of chicken on your skimmer and fry in batches. Each batch you will want to cook for 10 minutes rotating the chicken every 2 minutes. Plate the chicken after each batch, shake the skimmer each time to make sure you get rid of any oil which may kick around!

Next up do the same thing, with the fries but for less time 2 minutes and the flip each of the fries and another 2 minutes should do it. Add them to a bowl after each batch shaking the skimmer just like with the chicken.

That’s it we’re done!
