Great so what ingredients do I need?
For 2 people:
For the curry paste:
2 table spoons of flour
2 tea spoons of ground cumin
1 tea spoon of salt
1 tea spoon of ground turmeric
1 tea spoon of ground coriander
1 tea spoon of garlic powder
1 tea spoon of star anise (approx 2 small stars)
1 table spoon of fenugreek seed (ground)
1 tea spoon of fennel seed (ground)
1 tea spoon of english mustard
1 tea spoon of chilli powder
1 table spoon of gram flour
2 table spoons of sunflower oil
For the Tofu:
4 table spoons of sunflower oil (for frying)
1 tofu 400g
2 table spoons of flour
1 table spoon of gram flour
Other:
1 cup of rice per person
Great i’ve got those ingredients what do I need to do?
First we need to press the tofu, start by taking it out of its packaging and draining very well, then place onto a chopping board. Then place another chopping board on top. I then place a saucepan of water on top to keep it weighted. Keep it like this for at least 10 minutes ideally 20 minutes.
While you’re pressing the tofu let’s make the curry paste, add all of the curry paste ingredients to a bowl and mix well.
This is a good time to put the rice in a saucepan of water and put the oil on your wok and place both on a medium-high heat.
While that’s doing that, grab your tofu and put 2 table spoons of flour and 1 table spoon of gram flour into a bowl. Slice the tofu into fish finger sized strips. Next stir the two flour together and dip and cover each strip of tofu.
Now put each strip of tofu into the wok and cook for 2 minutes, and flip and cook for another 2 minutes, do this for approx 10-12 minutes to ensure they’re nice and crisp. While you’re doing this put boiling water into the bowl of curry paste, add small amounts at a time until you have the thickness of the sauce you desire – make sure you stir well!
Now you’re ready to start serving..
Pour the sauce onto the tofu and you’re done!
