Nate’s Salmon in a Herby Cheesy Sauce Recipe

I haven’t done any form of cheesy dish in ages and I LOOOOOOVE cheese! I had a spare salmon in the freezer so that basically set my dish for me, and it’s a good one!

What ingredients do I need?

Salmon filet (one or two per person)
Lemon juice
Cooking oil
Couscous
Tenderstem broccoli
Chilli flakes
Mild chilli powder
Smoked paprika
Basil (dried or fresh)
Ground parsley
Ground Oregano
Butter
Rice milk (regular milk is fine if you wish)
Grated mature cheddar cheese.

Great i’ve got all those what do I need to do?

Firstly put your couscous, a 4-5 shakes of chilli flakes, a table spoon of mild chilli powder and a table spoon of smoked paprika into a saucepan, then add water and start boiling at a medium heat. Making sure to periodically stir the couscous.

While that’s cooking fill a saucepan with just over a cut of rice milk (for 2 people). Then add a level tablespoon of Parsley, and a level table spoon of basil (if you’re using fresh like me chop up finely 4 to 5 leaves). Next add a level table spoon of oregano and about a tablespoon of lemon juice also. Stir that while on a medium heat. At this point add some cooking oil to a griddle and put it on a high heat.

Let that cook for awhile of a medium hear and then add one generous table spoon
of butter and one heaped table spoon of flour. Mix well we don’t want no flour lumps in this sauce!!

Now for the best part, lets add that cheese, around 3 table spoons of grated cheese should do it, if you’re not the biggest cheese lover either use less mature cheese or reduce down to 2 table spoons. Mix the cheese in, at this point turn the griddle heat down to a medium heat and place the salmon and tenderstem broccoli, both will cook quickly which is why we’re leaving them to last.

Keep flipping the broccoli and salmon every minute or so to make sure you don’t burn either, while doing this periodically stir the sauce and couscous. Once the salmon is a whitey-pink all other rather than the brighter pink we started with we should be done.

And that’s it we’re done, add the couscous, salmon and tenderstem broccoli to the plate and pour that herby-cheesy sauce onto that salmon and we’re good to go!

    1. Thanks Albert, it’s a really tasty dish, which tastes naughty because of the cheese in the sauce, but it’s healthy overall so win win!
