Nate’s Battered Salmon and Chips Recipe

This is a very quick recipe and is based on our beloved British dish ‘Fish and Chips’.

So what ingredients do we need?

Salmon (generally one per person)
Potato (or if short on time fries)
Good quality ready salted crips
Flour (3 heaped table spoons per person)
1 egg per person
Milk (roughly the same amount of milk weight to the eggs you’re using)
Paprika
Vegetable oil (any kind, i’m using peanut oil )
Salt & pepper
A freezer bag

 

So how do I make it?

First add the crack the eggs into a mixing bowl, use one per person and add roughly the same amount of milk as the egg content. Mix together until you have a yellow liquid batter. Once you have a yellow batter place the first salmon in there to soak for a while. At this point add a decent amount of vegetable oil to a wok and heat to a medium heat.

Next get a freezer bag out and place some good quality salted crisps inside and close the bag, the get a rolling pin and crush them into tiny pieces. Then flip the salmon in the bowl and put the broken crisps onto the salmon.

Next add the flour onto the salmon and mix until you have a thickish batter surrounding the fish, now add this into the now boiling oil in your wok, it should bubble around the edges. Place the fish in gently as you don’t want to get splashed by hot oil!

Move fish around the pan and when the edges are starting to look solid and golden brown flip the fish and do the same thing on the other side for the same amount of time. Once done add to a cooling tray to loose any of the remaining oil.

For the chips slice potato into fries shapes (or just buy fries) add parika, salt and pepper to the chips and fry in the oil you fried the fish in, keep frying until they’re how you like them, once done tip the fries into a siv to separate them from the oil and leave on a cooling tray. Once done add both to the plate and you’re done (you may want to add the dish into the oven for a few minutes to crisp everything off further but I didn’t).
