Great i’ve got all the ingredients what now?
To start mix all the sauce ingredients above into a sauce pan and once full mixed put on a low heat, to start with your sauce will be runny and this is fine the honey and sugar will soon thicken this when it melts. Keep stirring periodically.
In the mean time put a large amount of oil into a wok and put it on a medium heat, and then start to dice your chicken breast into cubes.
Once diced it’s time to make the batter, this is really simple just put an egg per person and match roughly the same amount of milk as the egg content and mix together. You may want to add a small amount of soy sauce to further tenderise the chicken. Once mixed place the diced chicken into the mix, and leave to soak. This is a good point to put your rice and water in a sauce pan and start boiling at a medium heat.
While the rice is boiling lets fry these chicken bad boys, place each chicken cube one by one into the oil in the wok, remember place in don’t drop in as you don’t want oil burns!! Don’t put too many in at a time do it in batches, don’t do any more than 14 at a time as a rule.
Once the batter goes golden brown on the sides, it’s time to flip leave for about the same time as before, and keep flipping periodically until you have some nice golden brown chicken balls. Take these out one by one with a folk or other utensil and leave to cool, then repeat for the next batch.
This is a good time to stir your rice, you don’t want any burning on the edges or sticking to the bottom of your pan, once your chicken is done, fry the broccoli florets in the same oil, this wont take long at all compared to the chicken.
Increase the heat of the sauce up slightly by 1 or 2 points and put the chicken and broccoli into the sauce and keep stirring until it’s covered entirely in the sauce. Check on the rice it should ready. Get rid of most of the oil from the wok and drain and transfer the rice to the wok.
Keep periodically stirring the sesame chicken also you don’t want burnt sauce! Add some sesame seeds to the sesame chicken, and crack an egg over the rice. periodically stir the chicken, and stir often the egg and rice. Once the egg looks mixed well and cooked add the rice to the plate. Then add the sesame chicken on top of the rice, finally sprinkle some more sesame seeds on top of the chicken.
And that’s it, go and eat!
