Nate’s Fried Oregano Chicken Recipe

This recipe is both European and Indian inspired, adding Indian spices with oregano into fried chicken to create a spectacular taste.

What ingredient do I need?

These ingredients will serve 3-4 people:

Chicken drumsticks 900g
1 egg
1 tea spoon of chilli powder
4 table spoons flour
2 table spoons of almond milk
1 tea spoon of coriander powder
2 tea spoons of garlic powder
1 tea spoon of ginger powder
1/2 tea spoon of onion granules
3 tea spoons of oregano
6 table spoons of gram flour
3 table spoons of cooking oil
1.5 table spoons of cumin seeds

Great i’ve got those ingredients, what do I need to do?

To begin with we will make a runny paste which we will marinade the chicken in, start by adding the flour, chilli powder, egg, almond milk, ground coriander, garlic powder, ground ginger, onion granules and oregano into a bowl and mix well. Then pour this over the chicken. Rotate each piece of chicken in the mixture until fully covered. Then wrap the container in cling film and add to the fridge for a couple of hours.

 

After marinating, cover the chicken in gram flour, then rotate each piece and cover the other side. Add the cooking into the wok and place on a high heat, after several minutes add the cumin seeds – once they start to crackle start putting the chicken into the wok, place these in carefully to prevent oil splashes!

Keep the chicken at a high heat for now, cook one side of the chicken for 1 minute, then rotate and cook the other side for 1 minute. Now reduce to a medium heat and cook for 15-20 minutes (depending on chicken size) rotating once a minute making sure the top and bottom of each piece gets cooked as well. (Note it’s always best to use temperature probe to make sure the chicken is at temperature!). Once done add to a drying rack for a couple of minutes to ensure any loose oil drips off.

Now you’re ready to serve, add more oregano on top to serve, goes well with rice, chips or toasted garlic bread!
