It’s hump day so the blues are starting to fade but Friday still seems like a long crawl away, so cooking may be a bit of an effort for you after a long day of work. Today’s recipe is really easy and doesn’t require much washing up, so that’s definitely a Wednesday win! I’ll get straight to it!

What ingredients do you need?

For the Potatoes:
1 tablespoon of ground garlic
1/2 tablespoon of fennel seeds
1/2 tablespoon of ground thyme
1/2 tablespoon of salt & pepper
4 small potatoes per person (i’m using pink fir apple potatoes)

For the Gammon:

1 egg per gammon
1/2 tablespoon of salt & pepper
3 table spoons of grated mozzarella
2 table spoons of grated cheddar
1 large gammon steak (large in diameter, try and use a relatively thin piece)

To serve:

White sprouting broccoli 5-6 sprigs per person.

Great i’ve got those ingredients what do I need to do?

Start by putting your potatoes, and the fennel, garlic, thyme, salt and pepper in a saucepan of water and start boiling at a medium-high heat.

Now put the gammon steak onto a baking tray and lighting salt and pepper it, then place in the oven at 200 degrees C, cook for 10 minutes.

After 10 minutes take the gammon out of the oven and flip it, then put the grated mozzarella on top, and the grated cheddar on top of that, then place in the oven for another 10 minutes, but this time at 250 degrees C.

After that 10 minutes, take the gammon out again, and crack an egg on top, also strain the potatoes and plate those. Lastly put fresh water in your saucepan and put the broccoli in and start boiling at a medium heat. Once thats all done put your gammon back in the oven for 7 minutes.

Now after the 7 minutes take your gammon out for the last time, plate it, and then plate the broccoli and we’re done, enjoy!
