This recipe is very simple, it is very bland in colour but it’s anything but bland in flavour, it’s very tasty!
I’ll get straight to it..
What ingredients do I need?
For the duck:
1 or 2 legs of duck per person.
1 tea spoon of flour per duck
1/4 tea spoon of ground fennel per duck
1/4 tea spoon of ground cinnamon per duck
1/4 tea spoon of ground star anise per duck
1/4 tea spoon of clove powder per duck
1/2 tea spoon of chilli flakes per duck
2 table spoons of cooking oil
For the rice:
1/2 cup of brown basmati rice per person
2 tea spoons of honey
2 tea spoons of chilli powder
1 tea spoon of garlic powder
1 tea spoon of brown sugar
1 tea spoon of chilli flakes
1 tea spoon of cumin
Great i’ve got those ingredients, what do I need to do?
Firstly put the fennel, cinnamon, star anise, clove powder and flour onto each duck leg, then rub it in well. The spices had great oriental style flavours while the flour helps to crisp up the skin and prevents the duck from drying out. Next flip it round and put the chilli flakes and more of the other spices on the bottom.
Next up put the rice, honey, chilli powder, chilli flakes, brown sugar, garlic powder and cumin into a saucepan, add water and place on a medium high heat. Also place some cooking oil onto a griddle and also place on a medium heat.
After around 4 or 5 minutes place the duck onto the griddle, do the floured side first, cook for around 2 minutes, then flip and cook for another 2 minutes, then cook each side each for 2 minutes, if certain parts of the meat don’t meat the pan push down on them.
Continue cooking for another 20 minutes flipping every 2 minutes for the first half and then every minute towards the end. Periodically stir the rice during this time.
After the 20 minutes it will be done, put make sure you leave the duck to rest for several minutes before serving, and then enjoy!
